
Ingredients
- 1 pineapple, chopped into bite-sized pieces
- 1 pound thick-cut bacon
- Toothpicks
- 1/3 cup honey
- 1 chipotle pepper (from a can of chipotle peppers in adobo sauce)
- 1 tablespoon water
Instructions
Preheat the oven to 400°F.
- Line a large baking sheet with foil (optional for easier cleanup, no need to grease).
Prepare the Pineapple:
- Chop the pineapple into bite-sized pieces (about 1-2 inches).
Prepare the Bacon:
- Slice each strip of bacon in half (or chop the entire package into halves for quicker prep).
- Wrap each pineapple piece in bacon and secure with a toothpick. Place on the baking sheet. Repeat with the remaining bacon and pineapple. Make sure to avoid touching all the pineapple with raw bacon.
Make the Chipotle Honey Glaze:
- In a blender or food processor, add 1/3 cup honey and 1 chipotle pepper (straight from the freezer works fine).
- Add 1 tablespoon water and blend until smooth.
- Once the glaze is ready, pour it into two small bowls for later use.
Coat the Bacon-Wrapped Pineapple:
- Use a pastry brush to coat each bacon-wrapped pineapple piece generously with the glaze from one of the bowls. Be generous with the glaze, but make sure to save some for after baking.
Bake:
- Bake the bacon-wrapped pineapple at 400°F for about 20 minutes or until the bacon is as crispy as you prefer.
- Once baked, remove from the oven and use the second bowl of glaze to coat the pineapple pieces again using a clean pastry brush.
Serve:
- Serve hot and enjoy!
Notes
- Chipotle Pepper: You’ll only need one chipotle pepper from the can. You can freeze the remaining peppers for later use.
- If serving later, wait to apply the second coat of glaze until just before serving.
- You can assemble the bacon-wrapped pineapple ahead of time (1-2 days before your event). Store them covered in the fridge, then glaze and bake just before serving.
