Carrot Cake Energy Bites


Ingredients

  • 2 cups shredded carrots
  • 1 cup gluten-free rolled oats
  • 1/2 cup unsweetened shredded coconut, plus more for rolling
  • 1 cup cashew butter
  • 3 tablespoons chia seeds
  • 1/3 cup maple syrup
  • 1 teaspoon vanilla extract

Instructions

  1. Add the shredded carrot to your food processor and pulse until finely grated. Transfer the grated carrot to a small bowl.
  2. Add the oats and shredded coconut to the food processor and pulse until the oats are slightly broken down into a flour-like consistency.
  3. Add the grated carrot, along with the remaining ingredients (cashew butter, chia seeds, maple syrup, and vanilla extract), to the food processor. Pulse until everything is well combined and a dough forms. Scrape down the sides if needed.
  4. Transfer the dough to the freezer for about 5 minutes to chill.
  5. Once chilled, use a tablespoon-sized cookie dough scoop to scoop out the dough and roll it into bite-sized balls.
  6. Roll the balls in extra shredded coconut if desired.
  7. Enjoy these nutritious energy bites!
