
Ingredients
- 2 cups shredded carrots
- 1 cup gluten-free rolled oats
- 1/2 cup unsweetened shredded coconut, plus more for rolling
- 1 cup cashew butter
- 3 tablespoons chia seeds
- 1/3 cup maple syrup
- 1 teaspoon vanilla extract
Instructions
- Add the shredded carrot to your food processor and pulse until finely grated. Transfer the grated carrot to a small bowl.
- Add the oats and shredded coconut to the food processor and pulse until the oats are slightly broken down into a flour-like consistency.
- Add the grated carrot, along with the remaining ingredients (cashew butter, chia seeds, maple syrup, and vanilla extract), to the food processor. Pulse until everything is well combined and a dough forms. Scrape down the sides if needed.
- Transfer the dough to the freezer for about 5 minutes to chill.
- Once chilled, use a tablespoon-sized cookie dough scoop to scoop out the dough and roll it into bite-sized balls.
- Roll the balls in extra shredded coconut if desired.
