Delicious Applesauce Oatmeal Muffins


Ingredients:

  • 1 3/4 cups all-purpose flour
  • 1 cup oats (old-fashioned or quick-cooking)
  • 1/2 cup granulated sugar
  • 1 1/2 teaspoons baking powder
  • 1 teaspoon cinnamon
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 egg
  • 1/2 cup milk
  • 1/4 cup oil (canola or vegetable)
  • 1 teaspoon vanilla extract
  • 1 cup applesauce
  • 1 tablespoon oats (optional, for topping)

Step 1: Preheat and Prepare Muffin Tin

Preheat your oven to 375°F (190°C).
Prepare your muffin tins by either spraying them with nonstick spray or lining them with paper liners.


Step 2: Combine Dry Ingredients

In a mixing bowl, combine:

  • 1 3/4 cups all-purpose flour
  • 1 cup oats (old-fashioned or quick-cooking)
  • 1/2 cup granulated sugar
  • 1 1/2 teaspoons baking powder
  • 1 teaspoon cinnamon
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt

Mix well to ensure the dry ingredients are evenly distributed. This step helps create a uniform batter later on.


Step 3: Mix Wet Ingredients

In a separate bowl, mix together:

  • 1 egg
  • 1/2 cup milk
  • 1/4 cup oil (canola or vegetable)
  • 1 teaspoon vanilla extract

Whisk until well combined, forming a smooth liquid mixture.


Step 4: Combine Wet and Dry Ingredients

Pour the wet ingredients into the dry ingredients. Add:

  • 1 cup applesauce

Stir until just combined. Be careful not to over-mix—lumps are fine and will yield fluffy muffins.


Step 5: Fill the Muffin Tins

Scoop the batter into the prepared muffin tin, filling each cup about two-thirds full.
(Optional) Sprinkle a few oats on top of each muffin for texture and visual appeal.


Step 6: Bake and Cool

Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
Allow the muffins to cool in the pan for 3-5 minutes, then carefully remove them and place on a cooling rack to cool completely or enjoy warm.
