Easy Peanut Butter Chia Pudding


Ingredients:

For the pudding:

  • 2 tablespoons chia seeds
  • 1 tablespoon peanut butter (creamy or crunchy)
  • 1 cup milk (animal or plant milk like almond or oat milk)
  • 1 tablespoon honey or maple syrup (optional, for sweetness)
  • ½ teaspoon vanilla extract (optional, for flavor)
  • A pinch of salt (optional, to enhance flavor)

For the garnish (optional):

  • Sliced bananas
  • Chopped peanuts or other nuts
  • A little extra peanut butter
  • Cocoa or chocolate chips
  • Fresh fruits

Instructions:

  1. Prepare the pudding:

    • In a bowl or jar, combine chia seeds, peanut butter, milk, honey or maple syrup (if using), vanilla extract, and a pinch of salt. Mix thoroughly so that the chia seeds are evenly distributed.
  2. Mix well:

    • If the peanut butter is thick, you can whisk or use a hand mixer to smooth it out and ensure there are no lumps.
  3. Refrigerate:

    • Cover and refrigerate for at least 2 hours, or overnight for the best results. The chia seeds will absorb the liquid and thicken the mixture into a creamy pudding.
  4. Serve and enjoy:

    • Once the pudding is set, stir it and taste to check for sweetness. Adjust if necessary.
    • Top with sliced bananas, chopped nuts, a little extra peanut butter, or any other toppings you like.
    • Serve in bowls or jars, and enjoy your creamy peanut butter chia pudding!
