Cuban Mojo Marinade Recipe (Mojo Sauce)

 


Ingredients:

  • 10 cloves garlic, chopped
  • 1 small onion, chopped
  • 1 teaspoon dried oregano
  • 1/2 teaspoon cumin
  • 1/2 teaspoon salt (or to taste)
  • Black pepper to taste
  • 1/2 cup sour orange juice (or equal parts orange and lime juice)
  • 1/3 cup olive oil

Instructions:

  1. In a food processor, combine the garlic, onion, oregano, cumin, salt, and pepper. Pulse until a paste forms. Alternatively, you can use a mortar and pestle to grind the ingredients by hand.
  2. In a small bowl, whisk together the sour orange juice and olive oil until it thickens.
  3. Stir in the seasoned garlic paste until well combined.
  4. Adjust the salt and pepper to taste.
  5. Use as needed.

Tips:

  • For a smoother paste, use a blender instead of a food processor.
  • If you don't have sour orange juice, you can use equal parts orange and lime juice.
  • You can also add other herbs and spices to the paste, such as cilantro, parsley, chili powder, or paprika.
  • Store the paste in an airtight container in the refrigerator for up to 2 weeks.

How to use the paste:

The paste can be used as a marinade for meat, fish, or vegetables. It can also be used as a condiment or dipping sauce. Here are a few ideas:

  • Marinate chicken breasts in the paste for 30 minutes before grilling or baking.
  • Add a dollop of the paste to grilled fish or shrimp.
  • Stir the paste into roasted vegetables for extra flavor.
  • Use the paste as a dipping sauce for tortilla chips or bread.
  • Spread the paste on a sandwich or wrap.
