Ingredients:
- 1/2 cup butter
- 2/3 cup white sugar
- 2 large eggs
- 1 cup buttermilk
- 1/2 teaspoon baking soda
- 1 cup cornmeal
- 1 cup all-purpose flour
- 1/4 teaspoon salt
Instructions:
- Preheat oven to 375 degrees F (175 degrees C). Grease an 8-inch square pan.
- In a large skillet over medium heat, melt the butter. Remove from heat and stir in the sugar. Quickly whisk in the eggs.
- In a small bowl, whisk together the buttermilk and baking soda. Add to the skillet mixture and whisk until combined.
- Stir in the cornmeal, flour, and salt until just combined. Pour batter into the prepared pan.
- Bake in the preheated oven for 30-40 minutes, or until a toothpick inserted into the center comes out clean.
- Let cool in the pan for a few minutes before slicing and serving.
