Grandmother's Buttermilk Cornbread

Ingredients:

  • 1/2 cup butter
  • 2/3 cup white sugar
  • 2 large eggs
  • 1 cup buttermilk
  • 1/2 teaspoon baking soda
  • 1 cup cornmeal
  • 1 cup all-purpose flour
  • 1/4 teaspoon salt

Instructions:

  1. Preheat oven to 375 degrees F (175 degrees C). Grease an 8-inch square pan.
  2. In a large skillet over medium heat, melt the butter. Remove from heat and stir in the sugar. Quickly whisk in the eggs.
  3. In a small bowl, whisk together the buttermilk and baking soda. Add to the skillet mixture and whisk until combined.
  4. Stir in the cornmeal, flour, and salt until just combined. Pour batter into the prepared pan.
  5. Bake in the preheated oven for 30-40 minutes, or until a toothpick inserted into the center comes out clean.
  6. Let cool in the pan for a few minutes before slicing and serving.
