Spicy Strawberry Fruit Roll Ups

 

Ingredients:

  • 3 cups chopped strawberries
  • 4 serrano peppers, diced
  • 3 tablespoons honey
  • 1 tablespoon lemon juice
  • 2 tablespoons water

Instructions:

  1. Combine all of the ingredients in a large pot.
  2. Heat to a simmer and cook for about 10 minutes, or until the strawberries soften and begin to break down.
  3. Let the mixture cool slightly.
  4. Process the mixture in a blender or food processor until smooth.
  5. Spread the mixture onto dehydrator sheets in a ¼-inch thick layer.
  6. Dehydrate at 130°F for 6-8 hours, or until the fruit leather peels away from the tray easily.
  7. Flip the fruit leather and continue dehydrating for another 2 hours, or until it is completely dry and there are no moist spots left.
  8. Let the fruit leather cool down a bit, then roll it up.
  9. Enjoy your fruit leather immediately, or wrap it in plastic wrap and store it in a cool, dry place for up to 6 months.

Notes:

  • Makes 3 large fruit leathers.
  • You can adjust the amount of serrano peppers to taste.
  • If you don't have a dehydrator, you can dry the fruit leather in a low oven set at 200°F for 6-8 hours, or until it is completely dry.
