Marinated Tomatoes

 

Ingredients:

  • 1 pound ripe tomatoes, sliced
  • 1/2 red onion, finely diced
  • 1 clove garlic, minced
  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar (or balsamic vinegar)
  • 1/2 lemon, juiced
  • 1 teaspoon fresh basil, chopped
  • 1 teaspoon fresh parsley, chopped
  • Sea salt and freshly ground black pepper to taste

Instructions:

  1. Arrange the sliced tomatoes on a large plate.
  2. In a bowl, whisk together the olive oil, red wine vinegar, lemon juice, onion, garlic, basil, parsley, salt, and pepper.
  3. Pour the marinade over the tomatoes and spread it evenly.
  4. Cover the plate with plastic wrap and refrigerate for at least 2 hours, or up to 2 days.
  5. When ready to serve, toss the tomatoes in the marinade and serve immediately.

Tips:

  • For the best flavor, use ripe, seasonal tomatoes.
  • Feel free to adjust the amount of vinegar and salt to your liking.
  • You can also add other herbs to the marinade, such as oregano or thyme.
  • Serve the tomato salad with your favorite meal, such as grilled chicken or fish, pasta, or rice
