Ingredients:
- 3 tablespoons butter
- ⅔ cup sugar
- 1 egg
- 1 teaspoon vanilla extract
- 2 tablespoons lemon juice
- 2 teaspoons lemon zest
- 1 cup frozen mixed berries
- ½ cup unsweetened almond milk
- 1 ½ cups self-rising flour
Instructions:
- Preheat oven to 350 degrees F (175 degrees C).
- In a large bowl, cream together the butter and sugar until light and fluffy. Beat in the egg, vanilla extract, lemon juice, and lemon zest until well combined.
- In a separate bowl, whisk together the self-rising flour and unsweetened almond milk.
- Add the dry ingredients to the wet ingredients alternately with the frozen mixed berries, beating until just combined. Do not overmix.
- Pour the batter into greased or paper-lined muffin tins and bake for 15-20 minutes, or until a toothpick inserted into the center comes out clean.
- Let the muffins cool completely before serving.
