Mixed Lemon Berry Muffins


Ingredients:

  • 3 tablespoons butter
  • ⅔ cup sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 2 tablespoons lemon juice
  • 2 teaspoons lemon zest
  • 1 cup frozen mixed berries
  • ½ cup unsweetened almond milk
  • 1 ½ cups self-rising flour

Instructions:

  1. Preheat oven to 350 degrees F (175 degrees C).
  2. In a large bowl, cream together the butter and sugar until light and fluffy. Beat in the egg, vanilla extract, lemon juice, and lemon zest until well combined.
  3. In a separate bowl, whisk together the self-rising flour and unsweetened almond milk.
  4. Add the dry ingredients to the wet ingredients alternately with the frozen mixed berries, beating until just combined. Do not overmix.
  5. Pour the batter into greased or paper-lined muffin tins and bake for 15-20 minutes, or until a toothpick inserted into the center comes out clean.
  6. Let the muffins cool completely before serving.
