Ingredients:
- 1 recipe artisan pizza dough (enough for 2 pizzas)
- 1 stick (1/2 cup) salted butter
- 3 cloves garlic, finely chopped
- 2 tablespoons minced green onion
- 1 tablespoon minced rosemary
- 1 tablespoon fresh thyme leaves
- Flaky sea salt
- Freshly ground black pepper
- Red pepper flakes, to taste
- 2 tablespoons minced chives
Instructions:
Prepare Oven: Place a pizza steel or stone in the oven and preheat to 500°F (260°C). Allow the stone to heat for a full 45 minutes. Prepare a pizza peel by generously flouring it and set aside.
Make Herb Butter: In a small saucepan over medium-low heat, melt the butter with the chopped garlic. Cook, stirring occasionally, until the butter is melted and the mixture becomes fragrant, about 5 minutes.
Prepare Herb Mixture: In a small bowl, combine the minced green onion, rosemary, and thyme.
Shape Dough: On a floured surface, take one dough ball and flatten it into a large disk, leaving a 1-inch edge. Using gravity, carefully stretch and shape the dough into a 12-inch circle. Transfer the shaped dough onto the prepared pizza peel. Ensure the dough isn’t sticking by jiggling the peel; add more flour if needed.
Assemble and Bake Pizza:
- Spoon the garlic butter evenly over the surface of the dough.
- Sprinkle half of the herb mixture evenly on top of the garlic butter.
- Season with flaky salt, freshly ground black pepper, and red pepper flakes to taste.
- Slide the prepared pizza onto the hot pizza steel or stone in the oven.
- Bake for 5 minutes until the crust edges are golden and crisp.
Broil and Finish: Turn on the broiler and broil the pizza for 2-4 minutes, or until the crust is golden brown with blistered spots.
Serve: Remove the pizza from the oven. Sprinkle half of the minced chives over the hot pizza. Slice and serve immediately.
Repeat: Repeat the process with the remaining dough ball and the remaining garlic butter and herb mixture.
