Ingredients
- 10 large eggs
- Salt and pepper, to taste
- 1 tablespoon extra virgin olive oil
- 1 medium red onion, diced
- 1 cup cherry tomatoes, sliced
- 8 ounces baby spinach, rinsed
- 5 ounces feta cheese, crumbled
- 6 whole grain breakfast rolls or English muffins
Instructions
Preheat Oven: Preheat your oven using the grill/broil setting to 450°F (225°C).
Prepare Eggs: Break the eggs into a medium-sized bowl and whisk thoroughly. Season with salt and pepper. Set aside.
Cook Vegetables: Heat olive oil in a large frying pan over medium-high heat. Add diced onion and sauté until translucent, about 3-5 minutes. Add sliced tomatoes and cook briefly.
Add Spinach: Add baby spinach to the pan. It may seem like a lot at first, but it will wilt down significantly. Stir and cook until spinach is wilted. Season with salt and pepper.
Cook Eggs: Pour the beaten eggs over the vegetable mixture in the pan. Shake the pan gently to distribute the ingredients. Cook over medium heat until the eggs are half set.
Add Feta Cheese: Sprinkle crumbled feta cheese evenly over the eggs.
Finish in Oven: Transfer the pan to the oven under the grill/broiler. Cook for about 10 minutes until the frittata is puffed up and golden.
Rest and Prepare Rolls: Let the frittata rest for a few minutes to cool slightly. Meanwhile, optionally toast the breakfast rolls or English muffins under the broiler.
Assemble Sandwiches: Slide the frittata out of the pan onto a cutting board. Use a biscuit cutter or large coffee cup to cut rounds of frittata that match the size of the rolls. Place one round of frittata on each roll base and cover with the roll top.
Freeze: Wrap each sandwich in foil, label with the date, and store in the freezer for later use.
