Homemade Cheese Fatayer Recipe! 🧀🥟

 

Ingredients

Cheese Filling:

  • 3 cups shredded mozzarella cheese
  • 1 cup crumbled feta cheese
  • 1 tbsp parsley, finely chopped
  • 1 large egg, beaten
  • 1/2 tsp onion powder
  • 1 tsp dried mint
  • 1 tsp Aleppo pepper
  • 1/2 tsp black pepper
  • 1/2 tsp garlic powder
  • 1 tsp nigella seeds

Dough:

  • 2 2/3 cups all-purpose flour (additional as needed)
  • 1/2 tbsp salt
  • 1/2 tbsp instant yeast
  • 1 cup lukewarm water
  • 1/2 tbsp sugar
  • 2 tbsp olive oil
  • 2 tbsp plain yogurt

For Assembly:

  • Milk or heavy cream, for brushing

Instructions

Make the Dough:

  1. Combine Ingredients:

    • In a large mixing bowl, combine flour, salt, yeast, water, sugar, olive oil, and yogurt.
    • Mix using a stand mixer with a hook attachment or a wooden spoon/rubber spatula. Knead for 2-3 minutes until you have a soft, elastic dough. If too sticky, add a tablespoon of flour as needed.
  2. Let Dough Rise:

    • Transfer the dough to a greased bowl, cover it, and let it rest in a warm place for an hour or until doubled in size.

Prepare the Cheese Filling:

  1. Mix Ingredients:
    • In a bowl, combine mozzarella, feta, parsley, egg, onion powder, mint, Aleppo pepper, black pepper, garlic powder, and nigella seeds.
    • Set aside until assembly.

Assemble Fatayer:

  1. Preheat Oven:

    • Preheat oven to 475°F.
  2. Shape Dough:

    • Punch down the risen dough and divide it into 12 equal portions. Shape each piece into a tight ball.
    • Stretch each piece longways into an oval/football shape.
  3. Fill and Shape:

    • Add a generous amount of cheese filling to the center of each dough piece.
    • Fold over the left and right sides, pinching the top and bottom to create a boat shape.
    • Transfer to a parchment-lined baking sheet. Brush edges with milk or heavy cream.
  4. Bake:

    • Bake for 10-12 minutes until golden brown on the edges.
    • Allow to cool for a few minutes before serving warm.
