Ingredients:
- Rice Noodles or Long Cut Pasta: 8 ounces
- Creamy Peanut Butter: ½ cup
- Tamari or Soy Sauce: ⅓ cup
- Honey: 2 tablespoons
- Thai Red Curry Paste: ¼ cup
- Fresh Ginger: 1 tablespoon, grated
- Carrots: 2, shredded
- Bell Peppers: 2, thinly sliced
- Sesame Oil: 1 tablespoon, plus ¼ cup
- Halloumi Cheese: 8 ounces, cubed and patted dry
- Garlic: 6 cloves, chopped
- Fresh Basil: ½ cup, chopped
- Fresh Cilantro: ½ cup, chopped
- Green Onions: 2, thinly sliced
- Toasted Sesame Seeds: 3 tablespoons
- Chopped Peanuts: 3 tablespoons
- Lime Juice: 2 tablespoons
Instructions:
Cook the Noodles:
- Bring a large pot of salted water to a boil.
- Cook the noodles according to package instructions.
- Drain and place them in a large bowl.
- Add the shredded carrots and sliced bell peppers to the bowl.
Prepare the Peanut Sauce:
- In a food processor, combine creamy peanut butter, tamari or soy sauce, honey, Thai red curry paste, grated ginger, and ⅓ cup water.
- Pulse until the mixture is smooth and well combined.
- Pour the sauce over the warm noodles and toss well to coat.
Cook the Halloumi:
- Heat 1 tablespoon of sesame oil in a skillet over medium heat.
- Add the cubed Halloumi and cook until golden brown, about 5 minutes.
- Remove Halloumi from the skillet and set aside.
Prepare the Garlic Oil:
- In the same skillet, add ¼ cup sesame oil and the chopped garlic.
- Add a pinch of chili flakes if you like a bit of heat.
- Cook until the garlic becomes crispy, about 5 minutes.
- Toss the cooked Halloumi with half of the garlic oil, chopped cilantro, basil, peanuts, and toasted sesame seeds.
- Add lime juice and mix well.
Assemble and Serve:
- Divide the noodles among bowls.
- Top with the Halloumi mixture.
- Garnish with additional green onions, herbs, and the remaining garlic oil if desired.
