- ¼ cup water
- ½ cup feta cheese, crumbled
- Salt + pepper, to taste
Instructions
Preheat Oven:
- Set your oven to broil.
Prepare Ingredients:
- Chop spring onion, parsley, and dill.
- Mince garlic.
Mix Eggs:
- In a large bowl, whisk eggs with water, salt, and pepper.
Cook Vegetables:
- Heat a skillet over medium heat. Add olive oil and minced garlic, cooking for 1-2 minutes until fragrant and slightly browned.
- Add baby spinach and cook until it starts to wilt.
- Stir in chopped herbs and cook for another minute.
Combine Ingredients:
- Ensure spinach and herbs are evenly distributed in the skillet.
- Pour whisked eggs over vegetables.
- Sprinkle crumbled feta on top.
Cook Frittata:
- Let it cook on the stovetop for about 7-8 minutes, or until edges begin to set.
Broil:
- Transfer skillet to the oven under the broiler. Broil for 3-4 minutes, until slightly browned and puffed up.
Cool and Serve:
- Allow frittata to cool slightly before cutting into 4 pieces. Serve warm.
