Slow Cooker Gigante (White) Beans


Ingredients:

  • 8 oz dried white beans (Gigante, Great Northern, or Cannellini)
  • 1 bay leaf
  • 1/2 teaspoon red pepper flakes
  • A few cloves garlic, smashed
  • 2 onions, chopped (about 2 cups)
  • 1.5 cups crushed tomatoes (Pomi finely diced tomatoes recommended)
  • A few sprigs thyme
  • Parmesan rind (optional)
  • 4 cups water
  • 1/4 cup olive oil
  • 2 teaspoons kosher salt (or to taste)
  • Fresh cracked pepper (to taste)
  • Shavings of Parmigiano Reggiano for serving
  • Toasted bread or oven-roasted polenta (for serving)

Instructions:

  1. Prepare the Beans: If you have time, soak the dried beans overnight to reduce cooking time. If not, you can cook them from dry, but be prepared for a longer cooking time.

  2. Assemble Ingredients: Place the dried beans, bay leaf, red pepper flakes, smashed garlic, chopped onions, crushed tomatoes, thyme sprigs, Parmesan rind (if using), and water into your crockpot. Drizzle with olive oil and season with 2 teaspoons of kosher salt.

  3. Cook: Cover and cook on high for 6 to 8 hours. Cooking time can vary depending on the type of beans used. If using unsoaked gigante beans, it may take up to 12 hours.

  4. Season and Serve: Once the beans are tender, taste the broth and adjust seasoning with additional salt and fresh cracked pepper if needed.

  5. Serve: Ladle the broth and beans into bowls. Top with shavings of Parmigiano Reggiano. Serve with toasted bread or oven-roasted polenta on the side. Drizzle with a bit more olive oil if desired.
