Whole Roasted Tandoori Cauliflower Recipe


Ingredients:
🍽 Cauliflower:
• 1 cauliflower head (about 1.3 lbs after trimming)
• 2 tsp kosher salt
• ½ tsp ground turmeric
• 2 tbsp water
• 1 tbsp olive oil (for basting)

🍽 Marinade:
• 2 tbsp yogurt
• 1-3 tsp Kashmiri red chili powder
• ½ tsp garam masala
• ½ tsp ground cumin
• 1 tsp ground coriander
• 1 tsp grated ginger
• 1 tsp grated garlic
• 1 tsp kosher salt
• 1 tbsp dried fenugreek leaves
• 1 tbsp olive oil

🍽 Raita:
• 1 cup Greek yogurt
• 2 small Persian cucumbers (peeled & grated)
• 1 garlic clove (grated)
• ¼ tsp ground cumin
• 2 tbsp cilantro (chopped)
• ½ tsp kosher salt

🍽 Garnish:
• 2 tbsp roasted pistachios (rough chopped)
• 2 tbsp pomegranate seeds (or cranberries/raisins)
• 2 tbsp cilantro (finely chopped)
• Pickled onions
• 4 lemon wedges

Instructions:
1️⃣ Brine & Steam: Mix salt & turmeric in water, coat cauliflower, then steam in the Instant Pot for 1 minute.
2️⃣ Marinate & Roast: Apply the yogurt marinade to the cauliflower, then roast in an air fryer or oven.
3️⃣ Make Raita: Combine yogurt, cucumber, garlic, cumin, cilantro, and salt for a refreshing side.
4️⃣ Plate & Serve: Garnish with pistachios, pomegranate seeds, pickled onions, and lemon wedges.
