Za’atar Spiced Pasta with Chickpeas and Spinach

 

Ingredients

  • Onion & Garlic: Sweet and pungent

    • 1 large onion, thinly sliced
    • 3-4 garlic cloves, minced
  • Spices & Herbs: Warm and earthy

    • 1 tsp cumin
    • 1 tbsp fresh thyme (or 1 tsp dried thyme)
    • 1-2 tbsp miso paste (optional, for umami)
  • Chickpeas: Nutty and creamy

    • 1 can (15 oz) chickpeas, drained and rinsed
  • Acid & Brightness:

    • Zest of 1 lemon
    • Juice of 1 lemon
  • Stock & Seasoning:

    • 2 cups vegetable stock
    • 1-2 tbsp olive oil (additional for frying)
    • 1-2 tsp sugar (to taste)
  • Finishing Touches:

    • 2 cups fresh spinach
    • 2 tbsp chopped fresh parsley
    • 1-2 tbsp za’atar spice blend
    • Salt and freshly ground black pepper, to taste

Instructions

  1. Sauté Onions and Garlic:

    • Heat 1-2 tbsp olive oil in a large sauté pan over medium heat.
    • Add the sliced onions and a pinch of salt. Cook, stirring occasionally, until the onions are soft and caramelized, about 5-7 minutes.
    • Stir in the minced garlic, cumin, thyme, and miso paste (if using). Cook for an additional 1-2 minutes, until fragrant.
  2. Crisp the Chickpeas:

    • Add the remaining oil, chickpeas, lemon zest, and sugar to the pan.
    • Fry for 5-8 minutes, stirring occasionally, until the chickpeas are crispy and golden.
  3. Make the Sauce:

    • Pour in the vegetable stock and lemon juice. Stir well and let the mixture simmer for about 8-10 minutes, until the sauce has thickened.
  4. Cook the Pasta:

    • While the sauce is simmering, cook the pasta according to the package instructions. Drain and set aside.
  5. Combine Pasta and Sauce:

    • Turn off the heat. Add the cooked pasta, fresh spinach, chopped parsley, and za’atar spice blend to the sauce. Toss everything together until the spinach is wilted and the pasta is well-coated.
  6. Season and Serve:

    • Taste and adjust seasoning with additional salt and freshly ground black pepper as needed.
    • Serve warm and enjoy!

Feel free to garnish with extra za’atar or parsley if desired. Enjoy your flavorful and satisfying pasta dish!
