Copycat Costco Chicken Bake

Ingredients:

  • 1 pound prepared pizza dough
  • 3 skinless, boneless chicken breasts
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 1/2 tablespoons olive oil
  • 3/4 cup water
  • 1 tablespoon all-purpose flour
  • 1/2 cup creamy Caesar dressing
  • 6 slices bacon, cooked and crumbled
  • 2 green onions, thinly sliced
  • 1 cup shredded Italian cheese (mozzarella and provolone)
  • 3/4 cup shredded Parmesan cheese
  • 1 large egg, beaten

Instructions:

Prepare the Pizza Dough:

  • Let the pizza dough rest at room temperature for an hour.

Cook the Bacon:

  • Preheat oven to 350°F (175°C). Bake bacon on a foil-lined baking sheet for 15 minutes. Drain, crumble, and set aside.

Cook the Chicken:

  • Season chicken with salt, pepper, and garlic powder.
  • Sear chicken in a skillet over medium-high heat, then add water and transfer to the oven.
  • Bake until cooked through. Let cool and chop into bite-sized pieces.

Assemble the Chicken Bakes:

  • Preheat oven to 400°F (200°C).
  • Roll out dough into 12-13 inch circles.
  • Spread Caesar dressing, Parmesan cheese, chicken, bacon, green onions, and Italian cheese on each circle.
  • Roll up the dough, pinch the seam, and place seam-side down on a baking sheet.

Bake the Chicken Bakes:

  • Brush with beaten egg and sprinkle with Parmesan cheese.
  • Bake for 20 minutes, or until golden brown.
