Ingredients:
- 1 tablespoon olive oil
- 1/2 tablespoon vinegar (white wine vinegar or apple cider vinegar)
- 1-2 cloves organic garlic, minced
- 2 tablespoons organic lemon juice
- 1 1/2 cups whole Greek yogurt, strained with cheesecloth if you have time
- 1/2 organic English cucumber, diced very small and excess water rung out
- 2 tablespoons fresh dill, minced
- 1/2 teaspoon sea salt and fresh pepper to taste
- 1/4 cup chopped fresh mint
- 1/4 cup crumbled feta cheese
- 1/4 teaspoon red pepper flakes
Instructions:
- Prepare cucumber: Peel the cucumber and dice it very small or pulse in a small food processor. Strain the excess liquid using a paper towel.
- Combine wet ingredients: In a bowl, combine olive oil, vinegar, garlic, lemon juice, salt, and pepper. Mix until well combined.
- Add yogurt: Using a whisk, blend in the yogurt.
- Add cucumber and dill: Add the diced cucumber and chopped dill.
- Chill: Chill for at least two hours before serving.
Optional additions:
- For extra flavor: Add chopped fresh mint, crumbled feta cheese, or red pepper flakes.
- For a thicker texture: Use Greek yogurt that has been strained for an extended period.
- For a spicier kick: Increase the amount of red pepper flakes.
