Cheddar Chive Biscuits

Ingredients:

Biscuits:

  • 3 cups (410 g) all-purpose flour
  • 2 tablespoons (30 g) granulated sugar
  • 1 1/2 tablespoons (20 g) baking powder
  • 1/2 teaspoon baking soda
  • 2 teaspoons (10 g) kosher salt
  • 1 tablespoon dehydrated onion
  • 2 sticks (8 oz, 227 g) unsalted butter, cold
  • 4 oz (113 g) white or sharp cheddar, shredded (about 1 1/2 cups)
  • 1/4 cup minced fresh chives
  • 1 cup (260 g) buttermilk, cold, plus 2 tablespoons for brushing the biscuits
  • Flaky sea salt (for sprinkling)

Instructions:

1. Dice the Butter:

  • Dice the cold butter into small 1/4-inch cubes. Place the diced butter in a bowl and transfer it to the freezer while you gather the rest of the ingredients.

2. Mix the Dry Ingredients:

  • In the bowl of a stand mixer, whisk together the flour, sugar, kosher salt, baking powder, baking soda, and dehydrated onions.
  • Stir in the chives and cheddar cheese.

3. Mix in the Butter:

  • Remove the butter from the freezer and add it to the dry ingredients. Toss the butter well to coat.
  • Using the paddle attachment of the stand mixer, mix on medium-low speed until the mixture resembles clumpy sand with pea-sized pieces of butter.

4. Add the Buttermilk:

  • With the mixer running, stream in the cold buttermilk and mix just until the dough begins to clump together.
  • Transfer the dough to a lightly floured surface and press it into an 8x11 inch rectangle.

5. Laminate the Dough:

  • Fold the rectangle into thirds and press into a 1-inch thick rectangle. Repeat this folding and pressing process 3 more times.
  • After the final fold, press the dough into a 9-inch square about 1 inch thick.

6. Preheat the Oven:

  • Preheat your oven to 450°F (230°C).

7. Cut and Bake:

  • Using a sharp knife, cut the dough into 9 equal squares and transfer them to a parchment-lined baking sheet. Refrigerate the biscuits for 30 minutes to chill.
  • Brush the tops of the biscuits with the remaining 2 tablespoons of buttermilk and sprinkle with flaky sea salt.
  • Bake for 18-20 minutes, or until the biscuits are puffy and golden brown.
