Ingredients:
Banana Bread:
- 3 ripe bananas (mashed)
- ⅓ cup melted butter (or coconut oil)
- ¾ cup granulated sugar (or coconut sugar)
- 1 egg
- 1 tsp vanilla extract
- 1 tsp baking soda
- Pinch of salt
- 1 ½ cups all-purpose flour
Cinnamon Swirl:
- ⅓ cup granulated sugar
- 1 ½ tbsp ground cinnamon
Instructions:
- Preheat Oven: Preheat to 350°F (175°C) and prepare a 9×5-inch loaf pan with parchment paper.
- Mash Bananas: In a large bowl, mash the ripe bananas.
- Mix Wet Ingredients: Stir in melted butter, sugar, egg, and vanilla.
- Mix Dry Ingredients: In another bowl, combine flour, baking soda, and salt, then fold into wet ingredients until just combined.
- Prepare Cinnamon Swirl: Mix sugar and cinnamon in a small bowl.
- Layer the Batter: Pour half of the batter into the pan, sprinkle with half of the cinnamon mixture. Add the rest of the batter and swirl with a knife.
- Bake: Bake for 50-60 minutes, until a toothpick comes out clean. If necessary, cover with foil during the last 10 minutes if browning too quickly.
- Cool & Serve: Cool for 10 minutes in the pan, then transfer to a wire rack to cool completely.
Storage & Tips: Store in an airtight container for up to 3 days or freeze for up to 3 months. Reheat slices for a fresh, warm treat.
