Miso-Glazed Black Cod


Ingredients:

  • 1/2 cup white miso paste
  • 1/4 cup mirin
  • 2 tbsp sake
  • 2 tbsp sugar
  • 4 black cod fillets (6 oz each)
  • Vegetable oil (for grilling/broiling)

Instructions:

  1. Prepare the Marinade: Whisk together miso paste, mirin, sake, and sugar until smooth.
  2. Marinate the Fish: Coat fillets in the marinade, cover, and refrigerate for at least 6 hours (overnight for best flavor).
  3. Preheat Grill or Oven: Prepare for grilling or broiling.
  4. Remove Excess Marinade: Wipe off extra marinade to prevent burning.
  5. Cook the Fish:
    • Grilling: Oil the grill, cook fillets skin-side down for 5-7 minutes per side.
    • Broiling: Place fish on a foil-lined sheet and broil for 8-10 minutes, watching for caramelization.
  6. Check Doneness: Ensure the internal temperature reaches 145°F (63°C).
  7. Serve Immediately: Enjoy hot off the grill or out of the broiler!
