Cold Spinach Dip (with Greek Yogurt)


Ingredients:

  • ½ tablespoon olive oil
  • 300 g (~10 oz) frozen chopped spinach
  • 1 teaspoon garlic puree (or 2 cloves fresh garlic, minced)
  • ½ red bell pepper, diced
  • ½ mild red chilli, finely chopped
  • 3 tablespoons Greek yogurt
  • 50 g (~½ cup) grated mature cheddar cheese
  • A few sprigs fresh parsley, chopped
  • ¼ teaspoon ground cumin
  • ½ teaspoon salt
  • ½ teaspoon black pepper

Instructions:

  1. Cook the Spinach
    Heat a splash of olive oil in a frying pan over medium heat. Add the frozen spinach and garlic. Cook for 5-10 minutes until the spinach is fully defrosted and any excess liquid has been cooked off. Alternatively, you can microwave the frozen spinach to defrost and then squeeze out any liquid.

  2. Cool the Spinach
    Transfer the cooked spinach to a mixing bowl and let it cool for at least 10 minutes.

  3. Prepare the Veggies
    While the spinach cools, dice the bell pepper and finely chop the chilli.

  4. Combine the Ingredients
    Once the spinach has cooled, add the diced bell pepper, chopped chilli, Greek yogurt, grated cheddar cheese, fresh parsley, ground cumin, salt, and black pepper. Mix everything well to combine.

  5. Chill the Dip
    Place the bowl in the fridge to chill for at least an hour before serving.
