Super Cheesy Orzo Mac and Cheese with Bacon Breadcrumbs

Ingredients:

  • For the orzo:

    • Butter, shallot, garlic, orzo, salt, black pepper, smoked paprika, ground nutmeg, chicken broth, heavy cream, sharp cheddar cheese, and gruyere cheese.
  • For the bacon breadcrumbs:

    • Bacon, panko breadcrumbs, Italian seasoning, Parmesan cheese, and parsley (for garnish).

Instructions:

  1. Prepare the Orzo:

    • Heat butter in a large pot or Dutch oven over medium heat. Sauté the shallot until softened, about 3 minutes. Add garlic and cook until fragrant.
    • Stir in the uncooked orzo and let it toast in the pan for a few minutes to enhance its flavor.
    • Add the salt, pepper, smoked paprika, and nutmeg. Pour in the chicken broth and heavy cream, bring to a simmer, and cook for 12 minutes, or until the orzo is al dente.
    • Turn off the heat and stir in the grated cheddar and gruyere cheeses, letting them melt into the creamy orzo. The dish will appear saucy, but the orzo will absorb the liquid as it cools.
  2. Make the Bacon Breadcrumbs:

    • In a small skillet, cook the chopped bacon over medium heat until crispy, about 5-7 minutes. Remove the bacon and place it on paper towels to drain.
    • Leave about 1 tablespoon of bacon grease in the pan. Add the panko breadcrumbs and toast them until golden brown. Stir in Italian seasoning for flavor.
    • Transfer the toasted breadcrumbs to a bowl, then mix in the cooked bacon and Parmesan cheese.
  3. Serve:

    • Spoon the creamy orzo onto plates and top with the crispy bacon breadcrumbs. Garnish with fresh or dried parsley if desired.

Notes:

  • Creaminess Tip: The orzo will soak up some of the liquid as it cools, making it thicker and even creamier. If you prefer it extra saucy, you can add a little extra cream or chicken broth when cooking.
  • Cheese Variations: While this recipe uses sharp cheddar and gruyere, you can experiment with other cheeses like mozzarella or fontina for different flavor profiles.
  • Leftovers: This dish reheats well. If needed, add a splash of milk or cream when reheating to restore the creamy texture.
