For Garnish:
- 1/2 avocado, diced
- 1 tablespoon fresh cilantro, chopped
Instructions:
Brown the beef:
- In a large skillet over medium heat, add the diced onion and cook for 3-4 minutes until softened.
- Add the ground beef, stirring to break it up and crumble. Sprinkle in 1 tablespoon of taco seasoning and cook for 7-8 minutes until the beef is lightly browned.
Cook the vegetables:
- Add the diced zucchini and bell pepper to the skillet and mix with the beef. Let the mixture cook for an additional 7-10 minutes, until the vegetables are tender but still firm.
- Once the vegetables are cooked, add the remaining taco seasoning and stir to combine.
Simmer with tomatoes:
- Add the diced tomatoes to the skillet, cover, and let the dish cook for an additional 2-4 minutes to allow the flavors to meld.
Serve:
- Serve the taco filling wrapped in lettuce leaves, in taco shells, or over rice.
- Garnish with diced avocado and fresh cilantro before serving.
Notes:
- You can use your favorite pre-made taco seasoning mix if preferred.
- For extra spice, add 1-2 more tablespoons of taco seasoning or more cayenne pepper to the filling.
