Churro Waffles with Peaches & Cream

Ingredients

For Peaches & Cream:

  • 1/2 cup water
  • 1/2 cup white sugar
  • 4 large peaches, pitted and sliced or diced
  • 1 cup heavy whipping cream

For Churro Waffles:

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 2 cups milk
  • 1/2 cup unsalted butter, melted
  • 2 large eggs
  • Neutral oil for frying
  • 1/2 cup white sugar
  • 1 1/2 teaspoons ground cinnamon

Instructions

  1. Prepare the oil for frying:
    Heat oil in a deep-fat fryer or a cast-iron skillet to a depth of at least 2 inches.

  2. Preheat the waffle iron:
    While the oil is heating, preheat your waffle iron according to the manufacturer’s instructions.

  3. Make the peaches & cream:

    • In a saucepan, bring 1/2 cup of water and 1/2 cup of white sugar to a boil over high heat.
    • Add the sliced or diced peaches, cover the pan, and reduce the heat to medium-low. Let it simmer for about 5 minutes.
    • Using a slotted spoon, transfer the peaches to a medium bowl. Stir in the 1 cup of heavy whipping cream and set aside.
  4. Make the churro waffle batter:

    • In a medium bowl, whisk together 2 cups of all-purpose flour, 1 tablespoon of baking powder, and 1 teaspoon of salt.
    • Add 2 cups of milk, 1/2 cup of melted unsalted butter, and 2 large eggs. Stir until just combined, but be careful not to overmix (a few small lumps are fine).
  5. Cook the waffles:

    • Grease your waffle iron. Ladle in enough batter to cover the plates, and cook for about 1-2 minutes. The waffles should be soft but firm enough to hold together when removed from the iron.
    • Transfer the waffles to a plate or tray and repeat until all the batter is used.
  6. Deep-fry the waffles:

    • In batches, deep-fry the waffles in the hot oil for approximately 1 minute or until golden brown and crispy.
    • Using tongs, remove the waffles and transfer them to a paper towel-lined surface to drain excess oil. Let them sit for at least 1 minute to absorb excess grease.
  7. Coat the waffles in cinnamon-sugar:

    • On a large plate, mix together 1/2 cup of white sugar and 1 1/2 teaspoons of ground cinnamon.
    • Coat both sides of the waffles in the cinnamon-sugar mixture.
  8. Assemble and serve:

    • Top the cinnamon-coated waffles with the peaches and cream mixture.
    • Optionally, sprinkle with more cinnamon if desired.
    • Serve warm and enjoy!

Storage:

  • Refrigerate churro waffles and peaches & cream in separate airtight containers for up to three days.
