Mushroom Toasts with Eggs and Tarragon


Ingredients:

  • 4 oz mixed wild or cremini mushrooms, sliced: Provides a savory, earthy flavor and hearty texture.
  • Extra-virgin olive oil or butter for sautéing: Used to cook the mushrooms and garlic, adding richness and flavor.
  • 2 slices Every Day Artisan bread: Provides a sturdy base for the toasts.
  • 3-4 cloves garlic, sliced: Adds a pungent, aromatic flavor.
  • 1 tablespoon fresh tarragon leaves plus more to garnish: Adds a unique, slightly anise-like flavor that complements the mushrooms and eggs.
  • 2 large eggs: The protein component, cooked to your desired doneness.
  • Coarse sea salt and freshly ground black pepper: To season the dish.

Instructions:

  1. Sauté Mushrooms and Garlic:
    • Warm a cast iron skillet over medium heat and drizzle with olive oil (or add butter).
    • Add the sliced mushrooms and garlic.
    • Sauté for 3-5 minutes, until browned.
    • Turn the mushrooms and sauté for another 3-5 minutes, until browned on the other side.
    • Add more oil if the pan becomes dry.
  2. Add Tarragon and Create Wells:
    • Stir in the fresh tarragon leaves.
    • Create two wells in the mushroom mixture.
  3. Cook Eggs:
    • Crack an egg into each well.
    • Continue to cook until the egg whites are set (cook to your desired yolk doneness).
  4. Toast Bread:
    • While the eggs are cooking, grill or toast the artisan bread until golden brown.
  5. Assemble Toasts:
    • Once the eggs are cooked, transfer them to the buttered toasts.
    • Arrange the sautéed mushrooms around the eggs.
  6. Season and Garnish:
    • Season with coarse sea salt and freshly cracked black pepper.
    • Top with more fresh tarragon leaves as desired.
