
Peanut Butter Bars with Ganache
For the Bars:
- 1 ½ cups creamy peanut butter (plus more to swirl on top)
- 1 ½ cups almond flour
- ⅓ cup coconut flour
- 3 tablespoons coconut oil, melted
- 6 tablespoons maple syrup
- 1 teaspoon vanilla extract
- 1 teaspoon kosher salt
For the Ganache:
- 1 cup dairy-free chocolate chips
- ½ cup coconut cream (from the top of a can of coconut milk) + a few tablespoons of coconut water (or water)
- ½ teaspoon kosher salt
For the Topping:
- Flaky sea salt (optional)
Instructions:
Make the Bars:
- In a mixing bowl, combine peanut butter, almond flour, coconut flour, melted coconut oil, maple syrup, vanilla extract, and salt. Stir until a thick dough forms.
- Press the dough into a wax paper-lined 8x8 dish, spreading it into an even layer.
Make the Ganache:
- In a saucepan over low heat, melt the chocolate chips and coconut cream together, stirring often.
- Add a pinch of kosher salt and a few tablespoons of coconut water (or regular water) to thin the ganache. Add one tablespoon at a time until you achieve a creamy, pudding-like texture.
Assemble:
- Spread the ganache evenly over the peanut butter dough.
- Drizzle additional peanut butter on top and use a toothpick or knife to swirl it into a design.
Chill and Serve:
- Refrigerate for at least an hour to cool the ganache and set the bars.
- Slice into bars and sprinkle with flaky sea salt if desired.
