NO BAKE PEANUT BUTTER COOKIE DOUGH BARS WITH CHOCOLATE GANACHE

Peanut Butter Bars with Ganache

For the Bars:

  • 1 ½ cups creamy peanut butter (plus more to swirl on top)
  • 1 ½ cups almond flour
  • ⅓ cup coconut flour
  • 3 tablespoons coconut oil, melted
  • 6 tablespoons maple syrup
  • 1 teaspoon vanilla extract
  • 1 teaspoon kosher salt

For the Ganache:

  • 1 cup dairy-free chocolate chips
  • ½ cup coconut cream (from the top of a can of coconut milk) + a few tablespoons of coconut water (or water)
  • ½ teaspoon kosher salt

For the Topping:

  • Flaky sea salt (optional)

Instructions:

  1. Make the Bars:

    • In a mixing bowl, combine peanut butter, almond flour, coconut flour, melted coconut oil, maple syrup, vanilla extract, and salt. Stir until a thick dough forms.
    • Press the dough into a wax paper-lined 8x8 dish, spreading it into an even layer.
  2. Make the Ganache:

    • In a saucepan over low heat, melt the chocolate chips and coconut cream together, stirring often.
    • Add a pinch of kosher salt and a few tablespoons of coconut water (or regular water) to thin the ganache. Add one tablespoon at a time until you achieve a creamy, pudding-like texture.
  3. Assemble:

    • Spread the ganache evenly over the peanut butter dough.
    • Drizzle additional peanut butter on top and use a toothpick or knife to swirl it into a design.
  4. Chill and Serve:

    • Refrigerate for at least an hour to cool the ganache and set the bars.
    • Slice into bars and sprinkle with flaky sea salt if desired.
  5. Enjoy:

    • Serve chilled or at room temperature. Enjoy these creamy, peanut butter-filled treats!
