Roasted Potatoes with Baked Feta and Garlic


Ingredients:

  • 1-2 large baking potatoes, washed and cubed
  • 7 oz (200 g) block of feta cheese
  • 2 tablespoons olive oil, divided
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 head of garlic (top sliced off)
  • 1 lemon, quartered
  • 1 tablespoon honey
  • ¼ cup (20 g) fresh basil, chopped

Instructions:

Preheat and Prepare:

  1. Preheat your oven to 390°F (200°C).
  2. Wash the potatoes thoroughly, cut them into cubes, and place them in a baking dish.

Season the Potatoes:

  1. Drizzle 1 tablespoon of olive oil over the cubed potatoes.
  2. Sprinkle with dried thyme, oregano, salt, and black pepper.
  3. Toss everything together to ensure the potatoes are evenly coated with the seasoning.

Add the Feta and Garlic:

  1. Place the block of feta in the center of the baking dish.
  2. Press one side of the feta into the seasonings on the potatoes for extra flavor before flipping it over.
  3. Add the head of garlic (with the top sliced off) and half of the lemon wedges to the dish.
  4. Drizzle the remaining olive oil over the feta, garlic, and potatoes.

Bake to Perfection:

  1. Roast everything in the oven for 45-55 minutes, or until the potatoes are crispy and golden.
  2. Keep an eye on the garlic, and if it starts to brown too much, remove it after about 35 minutes.

Mash and Mix:

  1. Once the garlic is cool enough to handle, squeeze the softened cloves out of their skins.
  2. Mash the roasted garlic into a paste using a knife, then add it to the baking dish.
  3. Squeeze the juice from the remaining lemon wedges over the potatoes and feta.
  4. Add the chopped fresh basil to the dish and gently mix everything together.

Finishing Touch:

  1. Drizzle honey over the top for a touch of sweetness.
  2. Sprinkle with additional fresh basil for a burst of color and flavor.
