
Ingredients:
For the Chorizo Dogs:
- 2-3 lbs. Ground Chorizo
- 1.5-2 lbs. Sliced Bacon
- 1 large block Soft Cheese
- Hot Dog Buns
For the Elote Sauce:
- 2.5 tbsp Mayonnaise
- 1.5 tbsp Sour Cream
- 1 tsp Hot Sauce
- 2 medium Limes, juiced
For the Grilled Corn:
- 3-4 Corn on the Cob
- 1 tbsp Kosher Salt
- 1 tbsp Black Pepper
- 1 tbsp Garlic Powder
- Canola Oil as needed
For Toppings:
- Chopped Cilantro
- Diced Red Onions
- Chile Con Limon Seasoning
- Cotija Cheese
Instructions:
Prepare the Chorizo Dogs:
- Slice the soft cheese into long rectangles (approximately 3” x ½” x ½”).
- Take ¼–⅓ lb of ground chorizo and encase the cheese inside to form a "hot dog" shape. Make sure the chorizo is tightly formed around the cheese to prevent it from breaking.
- Wrap each chorizo dog with 3-4 slices of bacon, making sure it’s tightly wrapped.
- Wrap the finished chorizo dogs in plastic wrap and refrigerate for at least 1 hour, or preferably overnight.
Prepare the Elote Sauce:
- Mix together mayonnaise, sour cream, hot sauce, and lime juice in a bowl.
- Refrigerate the sauce until ready to serve.
Prepare the Corn:
- Season the corn on the cob with canola oil, kosher salt, black pepper, and garlic powder. Set aside.
Grill the Chorizo Dogs:
- Preheat the grill to medium-high heat (around 375°F), using a two-zone cooking method.
- Place the chorizo dogs on the hot side of the grill and sear the bacon for about 1 minute per side, rotating to ensure all sides get crispy.
- Move the chorizo dogs to the cooler side of the grill and close the lid. Cook for 15-20 minutes, until the chorizo reaches an internal temperature of 165°F.
- Let the chorizo dogs cool for 2-3 minutes once done.
Grill the Corn:
- Grill the seasoned corn on the cob over high heat for 6-8 minutes, turning until fully cooked and slightly charred.
- Remove the corn from the grill and slice off the kernels from the cob.
Assemble and Serve:
- Place each chorizo dog into a hot dog bun.
- Top with grilled corn, a drizzle of Elote Sauce, chopped red onions, chopped cilantro, cotija cheese, and a dusting of chile con limon seasoning.
- Serve and enjoy!
