Instant Pot Chicken Stew


Ingredients:

  • 2 lbs boneless, skinless chicken thighs (cut into 2-inch cubes)
  • 2 tbsp olive oil
  • 1/3 cup white wine
  • 1 large onion (chopped)
  • 4 cloves garlic (minced)
  • 1 red bell pepper (diced)
  • 2 stalks celery (diced)
  • 2 medium carrots (cut into thick rounds)
  • 3 tbsp flour
  • 1/2 tsp rosemary (fresh or dried)
  • 1/2 tsp thyme (fresh or dried)
  • 1/2 tsp Italian herbs (dried)
  • 1/2 tsp paprika
  • Salt and pepper to taste
  • 1 1/2 lbs baby potatoes (peeled and cut into cubes)
  • 1 cup sweet peas (frozen)
  • 4 cups chicken broth
  • 1/2 cup heavy cream
  • 2 bay leaves
  • 1 tbsp fresh parsley (chopped)
  • 2 tbsp cornstarch

Instructions:

  1. Sauté:

    • Heat olive oil in the Instant Pot on the sauté function (high heat).
    • Brown the chicken in batches, set aside, and cover with foil to keep warm.
    • Add white wine and scrape the browned bits from the bottom of the pot.
    • Sauté onion for 1 minute, add garlic and cook for another 30 seconds.
    • Add bell pepper, carrots, and celery, sauté for 5 minutes.
    • Stir in rosemary, thyme, Italian herbs, and paprika, then season with salt and pepper.
    • Sprinkle flour over the mixture and stir to combine.
    • Return the chicken to the pot.
  2. Add Vegetables and Broth:

    • Add potatoes, frozen peas, and chicken broth (ensure the broth covers the ingredients but does not exceed the MAX line).
    • Stir everything together and add bay leaves.
  3. Pressure Cook:

    • Cancel the sauté function, lock the lid, and set the Instant Pot to Pressure Cook for 10 minutes.
    • Once done, let the pressure release naturally for 10 minutes, then manually release any remaining pressure.
  4. Thicken:

    • Once the lid is removed, set the Instant Pot back to sauté.
    • Stir in heavy cream and cook for 5 minutes.
    • Dissolve cornstarch in 1/2 cup of water and add it to the stew, stirring until thickened.
    • Turn off the sauté function, discard bay leaves, and garnish with fresh parsley.
  5. Serve:

    • Serve the stew hot and enjoy the rich, creamy flavors!
