- 4 cups chicken broth
- 1/2 cup heavy cream
- 2 bay leaves
- 1 tbsp fresh parsley (chopped)
- 2 tbsp cornstarch
Instructions:

Sauté:
- Heat olive oil in the Instant Pot on the sauté function (high heat).
- Brown the chicken in batches, set aside, and cover with foil to keep warm.
- Add white wine and scrape the browned bits from the bottom of the pot.
- Sauté onion for 1 minute, add garlic and cook for another 30 seconds.
- Add bell pepper, carrots, and celery, sauté for 5 minutes.
- Stir in rosemary, thyme, Italian herbs, and paprika, then season with salt and pepper.
- Sprinkle flour over the mixture and stir to combine.
- Return the chicken to the pot.

Add Vegetables and Broth:
- Add potatoes, frozen peas, and chicken broth (ensure the broth covers the ingredients but does not exceed the MAX line).
- Stir everything together and add bay leaves.

- Cancel the sauté function, lock the lid, and set the Instant Pot to Pressure Cook for 10 minutes.
- Once done, let the pressure release naturally for 10 minutes, then manually release any remaining pressure.

- Once the lid is removed, set the Instant Pot back to sauté.
- Stir in heavy cream and cook for 5 minutes.
- Dissolve cornstarch in 1/2 cup of water and add it to the stew, stirring until thickened.
- Turn off the sauté function, discard bay leaves, and garnish with fresh parsley.
