Ingredients:
For 4 servings
Gelatin Preparation:
- 15g gelatin powder
- 70ml cold water
Panna Cotta:
- 200ml milk
- 400ml double cream
- 2-2.5 tablespoons of sugar
- 1/2 teaspoon vanilla extract
Fruit Mousse:
- 200g fruit (frozen or fresh – e.g., raspberries, strawberries, blackberries)
- 1-2 tablespoons of sugar
- 50ml water (for blending)
- 100ml hot water to dissolve gelatin
- Fruit for decoration
Instructions:
- In a small bowl, soak the gelatin with cold water, allowing it to swell.
- This will facilitate quick dissolution later.
Prepare the Serving Glasses:
- Arrange glasses for serving, and if you desire a slanted effect, place them at an angle, possibly using muffin molds for stability.
- Place a small support in each well to ensure the glasses stay in place.
- In a saucepan, combine milk, double cream, vanilla extract, and sugar.
- Heat the mixture while stirring constantly until it reaches a boiling point.
- Remove the mixture from heat and add 2/3 of the bloomed gelatin.
- Stir until completely dissolved. Avoid further heating to preserve the gelatin’s properties.
- Gradually pour the liquid into the prepared glasses, ensuring a relatively equal distribution among all glasses.
- Be cautious and meticulous during this step.
- Carefully transfer the tray with glasses to the fridge and allow the panna cotta to set for 4-5 hours.
Prepare the Fruit Mousse:
- Using a food processor or blender, puree the chosen fruits with sugar and a bit of water.
- In a separate glass, dissolve the remaining 1/3 of gelatin in hot water, then add it to the fruit puree.
- Blend until well incorporated.
- Gradually pour the fruit mousse over the set panna cotta, using a spoon to avoid disturbing the layers.

- Return the glasses to the fridge and let them cool for an additional 2 hours.
Decorate and Serve:
- Once set, remove the glasses from the fridge, garnish with fresh fruits, and serve.
