Ingredients:
Dough:
- 4 cups all-purpose flour
- 2 teaspoons salt
- 1 cup shortening
- 1 cup milk
Filling:
- 8 ounces dried apricots
- 1 (6 ounce) package dried peaches
- ¾ cup white sugar
- Water to cover
- 2 cups vegetable oil for frying
Instructions:
- To make the dough, combine the flour and salt in a large bowl. Cut in the shortening until the mixture is crumbly. Mix in the milk and stir until the dough forms a ball. Roll out the dough and cut into 18 6-inch circles.
- To make the filling, combine the apricots, peaches, and sugar in a large saucepan. Add enough water to cover the fruit. Cover the pan and cook over low heat until the fruit is falling apart. Remove the lid and continue to cook until the water is evaporated.
- Heat the oil in a small high-sided skillet over medium heat. Spoon equal amounts of filling into each pastry circle and fold in half. Seal the pastry with a fork dipped in cold water.
- Fry a few pies at a time in the hot oil, browning on both sides. Drain the pies on paper towels.
Tips:
- For a more flavorful filling, add a teaspoon of cinnamon or nutmeg to the fruit mixture.
- To check if the oil is hot enough, drop a small piece of dough into it. If the dough sizzles and floats to the top, the oil is ready.
- Don't overcrowd the pan when frying the pies. This will lower the temperature of the oil and cause the pies to become soggy.
