Authentic Russian Salad 'Olivye'

 

Ingredients:

  • 6 potatoes, peeled
  • 1 carrot, peeled and diced
  • 4 whole eggs
  • 6 large pickles, diced
  • 1 (15 ounce) can peas, drained
  • 1/2 cup cubed fully cooked ham
  • 1 tablespoon chopped fresh dill (optional)
  • 1/2 cup mayonnaise

Directions:

  1. Bring a large pot of water to a boil. Add the potatoes and cook for 5-10 minutes, or until tender.
  2. Add the carrots and eggs to the pot and continue boiling for 10-15 minutes, or until the eggs are hard-boiled.
  3. Drain the potatoes, carrots, and eggs and let them cool slightly.
  4. Chop the potatoes, carrots, and eggs.
  5. In a large bowl, combine the potatoes, carrots, eggs, pickles, peas, ham, and dill (if using).
  6. Stir in the mayonnaise until the salad is evenly coated.
  7. Serve immediately or chill for later.
  8. Enjoy!
