In a large heavy bottom pot, pour at least 2 inches of oil. Heat to 425°F.
In a large bowl, whisk together flour, salt, and baking powder.
Add eggs, milk, and buffalo sauce and whisk to combine.
- Add more milk to reach your desired batter consistency.
Dip 5-6 cheese curds into the mixture and carefully drop them into the hot oil.
- Cook them for 1-2 minutes, or until a crispy golden brown.
Using a slotted spoon, remove the cooked cheese curds from the oil and place on a paper towel.
Repeat with remaining cheese curds.
Drizzle with remaining buffalo sauce and serve hot with Ranch or Blue cheese dressing for dipping.
