Ingredients:
- 6 boneless, skinless chicken breasts, diced
- 1 cup mayonnaise (or Greek yogurt)
- 1 cup shredded Parmesan cheese
- 1 teaspoon seasoning salt
- 1/2 teaspoon ground black pepper
- 1 teaspoon garlic powder
Instructions:
- Preheat oven to 375 degrees F (190 degrees C). Grease a 9x13 baking dish.
- In a small bowl, combine the mayonnaise, 3/4 cup Parmesan, seasoning salt, black pepper, and garlic powder.
- Place the diced chicken in the prepared baking dish. Spread the mayonnaise mixture evenly over the top of the chicken. Sprinkle the remaining Parmesan cheese on top.
- Bake for 30-35 minutes, or until the chicken is cooked through and the cheese is melted and bubbly.
- Remove from the oven and let cool slightly before serving.
Tips:
- To make the chicken less "soupy," you can place it on a wire rack over a baking sheet to cook. This will allow the liquid to drain away from the chicken.
- You can also add other ingredients to the mayonnaise mixture, such as dried herbs, spices, or chopped vegetables.
- Serve the chicken over pasta, rice, or potatoes.
