PARMESAN CHICKEN CASSEROLE

 

Ingredients:

  • 6 boneless, skinless chicken breasts, diced
  • 1 cup mayonnaise (or Greek yogurt)
  • 1 cup shredded Parmesan cheese
  • 1 teaspoon seasoning salt
  • 1/2 teaspoon ground black pepper
  • 1 teaspoon garlic powder

Instructions:

  1. Preheat oven to 375 degrees F (190 degrees C). Grease a 9x13 baking dish.
  2. In a small bowl, combine the mayonnaise, 3/4 cup Parmesan, seasoning salt, black pepper, and garlic powder.
  3. Place the diced chicken in the prepared baking dish. Spread the mayonnaise mixture evenly over the top of the chicken. Sprinkle the remaining Parmesan cheese on top.
  4. Bake for 30-35 minutes, or until the chicken is cooked through and the cheese is melted and bubbly.
  5. Remove from the oven and let cool slightly before serving.

Tips:

  • To make the chicken less "soupy," you can place it on a wire rack over a baking sheet to cook. This will allow the liquid to drain away from the chicken.
  • You can also add other ingredients to the mayonnaise mixture, such as dried herbs, spices, or chopped vegetables.
  • Serve the chicken over pasta, rice, or potatoes.
