Low-Carb Chicken and Vegetable Bake
Ingredients:
1 cauliflower, cut into florets
1 broccoli, cut into florets
400 g chicken cubes
1 tsp chicken spices or other spice mix
200 grams of cream cheese
100 ml cooking cream
100 g grated mozzarella or other grated cheese
1/2 tsp garlic powder
1/2 tsp onion powder
1/2 tsp paprika powder
salt and pepper to taste
Instructions:
Preheat the oven to 200 degrees Celsius.
Cut the cauliflower and broccoli into florets and add the florets to a pan filled with a little water. Bring the water to the boil and cook the vegetables with the lid on the pan for about 5-6 minutes until al dente.
In the meantime, season the chicken cubes with your favorite spice mix and fry in a pan with butter until golden brown and done within 6 to 8 minutes.
Mix the cream cheese, cooking cream, and mozzarella thoroughly in a large bowl. Add the herbs and mix well again.
After cooking the vegetables, drain the water well and, if necessary, pat the vegetables dry with a paper towel. Then add the vegetables to the bowl with the cream cheese and stir well.
Finally, add the fried chicken cubes to the bowl and mix well again.
Add the contents of the bowl to a greased oven dish and divide the vegetables and chicken evenly.
Bake the dish in the preheated oven for 15 to 20 minutes, until the cheese has melted.
Cut into 4 portions and enjoy!
Additional tips:
For a vegetarian option, you can replace the chicken with tofu or another plant-based protein.
You can also add other vegetables to this dish, such as carrots, zucchini, or mushrooms.
If you don't have cream cheese, you can use sour cream or plain yogurt instead.
If you don't have cooking cream, you can use milk instead.
