Cheesy Green Chili Rice Casserole

 Ingredients:

  • 4 cups cooked white rice
  • 1 can (8 ounces) green chiles, drained
  • 1 1/2 cups shredded cheddar cheese, divided
  • 1 cup sour cream
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons chopped parsley or cilantro

Instructions:

  1. Preheat oven to 350 degrees F (175 degrees C).
  2. In a large bowl, combine the cooked rice, green chiles, 1 1/2 cups of cheddar cheese, sour cream, garlic powder, salt, and pepper. Stir until well combined.
  3. Spray a 9x13 inch baking dish with non-stick cooking spray. Pour the rice mixture into the prepared baking dish and spread it out evenly.
  4. Sprinkle the remaining 1/2 cup of cheddar cheese over the top of the rice mixture.
  5. Bake for 20 minutes, or until the cheese is melted and bubbly.
  6. Let cool for 10 minutes before serving. Garnish with chopped parsley or cilantro (optional).
