Ingredients:
- 4 cups cooked white rice
- 1 can (8 ounces) green chiles, drained
- 1 1/2 cups shredded cheddar cheese, divided
- 1 cup sour cream
- 1 teaspoon garlic powder
- 1 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons chopped parsley or cilantro
Instructions:
- Preheat oven to 350 degrees F (175 degrees C).
- In a large bowl, combine the cooked rice, green chiles, 1 1/2 cups of cheddar cheese, sour cream, garlic powder, salt, and pepper. Stir until well combined.
- Spray a 9x13 inch baking dish with non-stick cooking spray. Pour the rice mixture into the prepared baking dish and spread it out evenly.
- Sprinkle the remaining 1/2 cup of cheddar cheese over the top of the rice mixture.
- Bake for 20 minutes, or until the cheese is melted and bubbly.
- Let cool for 10 minutes before serving. Garnish with chopped parsley or cilantro (optional).
