Burger Bowls with Caramelized Onion Aioli

 

Ingredients:

Caramelized Onion Aioli:

  • 2 tbsp olive oil
  • 1/2 large yellow onion, finely diced
  • 1 1/2 tsp brown sugar
  • 1/4 cup mayonnaise
  • 1/4 cup plain Greek yogurt
  • 1 tsp apple cider vinegar
  • 1/2 tsp garlic powder
  • Salt and freshly ground black pepper, to taste

Burgers:

  • 1 lb ground beef (80-85% lean)
  • Kosher salt and freshly ground black pepper, to taste

For Serving:

  • Roasted potatoes or French fries (homemade or from frozen)
  • Sliced tomatoes
  • Chopped romaine lettuce

Instructions:

Prepare Caramelized Onion Aioli:

  1. Heat olive oil in a skillet over medium heat. Add finely diced onion and a pinch of salt.
  2. Cook for 10 minutes, stirring occasionally, until softened.
  3. Sprinkle brown sugar over the onions and continue cooking for another 5-10 minutes, until onions are deep golden brown and jammy. Add a splash of water if onions start to burn or crisp up.
  4. Transfer caramelized onions to a bowl. Stir in mayonnaise, Greek yogurt, apple cider vinegar, and garlic powder until well combined.
  5. Season with salt and pepper to taste. Set aside.

Cook Burgers:

  1. Divide ground beef into 5-6 portions and shape into patties. Season both sides with salt and pepper.
  2. Wipe out the skillet used for onions and return to medium-high heat.
  3. Sear burgers for 2-3 minutes per side, or until cooked to desired doneness.

Assemble and Serve:

  1. Place chopped romaine lettuce on serving plates. Top with sliced tomatoes.
  2. Arrange burgers on top of the lettuce and tomatoes.
  3. Serve with roasted potatoes or French fries on the side.
  4. Dollop each burger with caramelized onion aioli.
  5. Enjoy your flavorful burgers with all the delicious toppings!

Notes:

  • Adjust seasoning and consistency of the aioli according to your preference.
  • These burgers pair well with crispy potatoes and fresh vegetables, making a satisfying meal for any occasion.
