Ingredients:

- 1/2 large yellow onion, finely diced
- 1 1/2 tsp brown sugar
- 1/4 cup mayonnaise
- 1/4 cup plain Greek yogurt

- Salt and freshly ground black pepper, to taste
Burgers:
- 1 lb ground beef (80-85% lean)
- Kosher salt and freshly ground black pepper, to taste
For Serving:
- Roasted potatoes or French fries (homemade or from frozen)
- Sliced tomatoes
- Chopped romaine lettuce
Instructions:
Prepare Caramelized Onion Aioli:
- Heat olive oil in a skillet over medium heat. Add finely diced onion and a pinch of salt.
- Cook for 10 minutes, stirring occasionally, until softened.
- Sprinkle brown sugar over the onions and continue cooking for another 5-10 minutes, until onions are deep golden brown and jammy. Add a splash of water if onions start to burn or crisp up.
- Transfer caramelized onions to a bowl. Stir in mayonnaise, Greek yogurt, apple cider vinegar, and garlic powder until well combined.
- Season with salt and pepper to taste. Set aside.
Cook Burgers:
- Divide ground beef into 5-6 portions and shape into patties. Season both sides with salt and pepper.
- Wipe out the skillet used for onions and return to medium-high heat.
- Sear burgers for 2-3 minutes per side, or until cooked to desired doneness.
Assemble and Serve:
- Place chopped romaine lettuce on serving plates. Top with sliced tomatoes.
- Arrange burgers on top of the lettuce and tomatoes.
- Serve with roasted potatoes or French fries on the side.
- Dollop each burger with caramelized onion aioli.
