Chicken with Peaches - 30-Minute One-Pan Meal


Ingredients:

Chicken:

  • 1.4 lb boneless, skinless chicken thighs
  • 1/2 teaspoon chili powder, or more to taste
  • 1 teaspoon Italian seasoning
  • Salt and pepper, to taste
  • 2 tablespoons olive oil

Peaches:

  • 2 medium yellow peaches, thoroughly washed, cored, and sliced
  • 3 tablespoons honey, or more to taste
  • Juice of 1/2 lemon, freshly squeezed, or more to taste
  • 2 tablespoons butter

Instructions:

Cooking the Chicken:

  1. Season the chicken thighs with chili powder, Italian seasoning, salt, and pepper.

  2. Heat a cast-iron skillet over medium heat for 2 minutes to allow it to heat through.

  3. Add 2 tablespoons of olive oil to the skillet. Place the seasoned chicken thighs in the skillet and cook on medium heat for 5 minutes without moving them, allowing them to sear.

  4. Flip the chicken thighs over, reduce heat to low-medium, and continue cooking for about 5 more minutes or until cooked through. Remove from heat and set aside.

  5. Remove the chicken from the skillet.

Cooking the Peaches:

  1. In the same skillet over medium heat, add the sliced peaches. Cook them gently for about 5 minutes, being careful not to overcook.

  2. Add honey, lemon juice, and butter to the skillet with the peaches. Stir everything together until the butter is melted and the peaches are coated.

Assembly:

  1. Return the cooked chicken thighs to the skillet, nestling them among the peaches. Reheat briefly until everything is warmed through.

  2. Remove from heat and garnish with fresh thyme.
