- 2 teaspoons salt
- 3/4 teaspoon freshly ground black pepper
- 2 large eggs
- 1 cup (100g) finely grated Parmesan cheese
- 1 and 1/2 cups panko breadcrumbs
- 3/4 cup (171ml) water
**For the Sauce:**
- 1/3 cup (76ml) olive oil
- 8 cloves garlic, minced
- 1/2 teaspoon crushed red pepper flakes
- 2 (28 ounce) cans crushed tomatoes with basil
- 1 and 1/2 teaspoons salt
- 1/2 teaspoon granulated sugar
- 1 and 1/2 teaspoons Italian seasoning
- 1/2 cup fresh basil leaves, chopped
**For the Subs:**
- 8 crusty sub rolls, cut in half
- 8 ounces shredded provolone cheese
- 6 ounces shredded fontina cheese
- 2 ounces finely grated Parmesan cheese
- Fresh basil leaves, torn for garnish (optional)
### Instructions:
**For the Meatballs:**
1. Preheat the oven to 425 degrees Fahrenheit (220 degrees Celsius). Line a large baking sheet with parchment paper and set aside.
2. In a large bowl, combine ground beef, ground pork, garlic powder, onion powder, Italian seasoning, black pepper, salt, eggs, grated Parmesan cheese, and panko breadcrumbs.
3. Slowly add water, a few tablespoons at a time, mixing with your hands until just combined. Be careful not to overmix; the mixture should be moist but still able to hold its shape.
4. Using an ice cream scoop or large spoon, portion about 2 and a half tablespoons of meat mixture and roll it into a ball. Place each meatball on the prepared baking sheet. Repeat until all meat is used.
5. Bake meatballs in the preheated oven for 20 minutes, or until cooked through.
**For the Sauce:**
1. While the meatballs are baking, heat olive oil in a medium-sized pan over medium-low heat. Add minced garlic and sauté for about a minute, until golden and fragrant. Stir in crushed red pepper flakes.
2. Add crushed tomatoes, salt, sugar, and Italian seasoning to the pan. Stir well to combine. Simmer the sauce for at least 15 minutes, stirring occasionally.
3. Stir in chopped basil and continue to cook for another 5 minutes. Adjust seasoning with salt and pepper to taste.
4. When meatballs are done baking, add them to the marinara sauce. Stir gently to coat meatballs with sauce. Keep warm.
**For the Subs:**
1. Preheat the broiler in your oven. Slice each sub roll in half lengthwise, being careful not to cut all the way through.
2. Place 5 meatballs into each prepared sub roll. Spoon additional marinara sauce over the meatballs.
3. Divide shredded provolone and fontina cheeses evenly among the subs, sprinkling over the top.
4. Place the assembled subs on a baking sheet and broil for a few minutes, until the cheese is melted and bubbly, and the tops are slightly golden brown. Watch closely to prevent burning.
5. Remove subs from the oven. Sprinkle torn basil leaves and grated Parmesan cheese over the tops.
6. Serve the subs warm and enjoy immediately!
