Ingredients:
- 4 boneless, skinless chicken breasts
- 2 lemons, juiced and zested
- 3 tablespoons olive oil
- 3 cloves garlic, minced
- 2 teaspoons dried oregano
- 2 teaspoons dried thyme
- Salt and pepper to taste
- Chopped fresh parsley for garnish (optional)
Instructions:
In a small bowl, whisk together the lemon juice, lemon zest, olive oil, minced garlic, dried oregano, dried thyme, salt, and pepper to create the marinade.
Place the chicken breasts in a shallow dish or a resealable plastic bag. Pour the marinade over the chicken, making sure each breast is evenly coated. Marinate in the refrigerator for at least 30 minutes, or up to 4 hours for maximum flavor.
Preheat your grill to medium-high heat. Remove the chicken from the marinade and discard any excess marinade.
Grill the chicken breasts for 6-8 minutes per side, or until cooked through and no longer pink in the center. The internal temperature should reach 165°F (75°C) when measured with a meat thermometer.
Once cooked, remove the chicken from the grill and let it rest for a few minutes before serving. Garnish with chopped fresh parsley if desired.
