Grilled Lemon Herb Chicken

 

Ingredients:

  • 4 boneless, skinless chicken breasts
  • 2 lemons, juiced and zested
  • 3 tablespoons olive oil
  • 3 cloves garlic, minced
  • 2 teaspoons dried oregano
  • 2 teaspoons dried thyme
  • Salt and pepper to taste
  • Chopped fresh parsley for garnish (optional)

Instructions:

  1. In a small bowl, whisk together the lemon juice, lemon zest, olive oil, minced garlic, dried oregano, dried thyme, salt, and pepper to create the marinade.

  2. Place the chicken breasts in a shallow dish or a resealable plastic bag. Pour the marinade over the chicken, making sure each breast is evenly coated. Marinate in the refrigerator for at least 30 minutes, or up to 4 hours for maximum flavor.

  3. Preheat your grill to medium-high heat. Remove the chicken from the marinade and discard any excess marinade.

  4. Grill the chicken breasts for 6-8 minutes per side, or until cooked through and no longer pink in the center. The internal temperature should reach 165°F (75°C) when measured with a meat thermometer.

  5. Once cooked, remove the chicken from the grill and let it rest for a few minutes before serving. Garnish with chopped fresh parsley if desired.

  6. Serve the grilled lemon herb chicken with your favorite sides, such as roasted vegetables, salad, or rice.
