Jalapeno Peach Chicken is the perfect blend of spicy and sweet!

 

Ingredients:

Peaches:

  • 2 yellow peaches, pitted and sliced

Peach Glaze:

  • ½ cup (160 g) peach preserves
  • 1 tablespoon extra virgin olive oil
  • 1 teaspoon soy sauce
  • 1 teaspoon apple cider vinegar
  • 1 teaspoon Dijon mustard
  • ½ teaspoon minced garlic
  • ½ teaspoon kosher salt
  • ⅛ teaspoon black pepper
  • ⅛ teaspoon red pepper flakes

Chicken:

  • 2 pounds boneless, skinless chicken thighs
  • 1 teaspoon kosher salt
  • ½ teaspoon black pepper
  • ½ teaspoon chili powder
  • 2 tablespoons extra virgin olive oil
  • 1 medium jalapeno pepper, thinly sliced

Instructions:

Peach Glaze:

  1. In a medium bowl, combine peach preserves, extra virgin olive oil, soy sauce, apple cider vinegar, Dijon mustard, minced garlic, kosher salt, black pepper, and red pepper flakes. Mix until well incorporated. Set aside.

Chicken:

  1. Pat the chicken thighs dry with paper towels.
  2. In a small bowl, mix together kosher salt, black pepper, and chili powder.
  3. Rub the seasoning mixture evenly over the chicken thighs.

Cooking Instructions:

  1. In a large nonstick skillet over medium heat, heat the extra virgin olive oil. Once hot, add the chicken thighs in batches if necessary (depending on the size of your skillet). Cook the chicken for about 5 minutes on each side, flipping once, until the internal temperature reaches 165°F (75°C). Remove the chicken from the skillet and transfer to a plate. Tent with foil to keep warm.

  2. In the same skillet, increase the heat to medium and add the thinly sliced jalapeno pepper. Cook for about 3 minutes until softened.

  3. Add the sliced peaches to the skillet with the jalapeno peppers. Cook for an additional 3 minutes or until the peaches have softened slightly.

  4. Pour the prepared peach glaze over the peaches and jalapenos in the skillet. Stir well to coat everything evenly in the glaze.

  5. Return the cooked chicken thighs to the skillet with the glaze, peaches, and jalapenos. Spoon some of the glaze over the top of the chicken.

  6. Cook for 1-2 minutes, allowing the chicken to heat through and the flavors to meld together.

  7. Serve the peach glazed chicken warm, spooning any remaining glaze, peaches, and jalapenos over the chicken as desired.
