Keto Zucchini Fritters without Flour


Ingredients

  • 1 1/2 pounds zucchini, grated
  • 1/2 cup sharp white cheddar cheese, grated
  • 1/4 cup Parmesan cheese, grated
  • 1 large egg
  • 2 tablespoons cream cheese
  • 6-7 cloves garlic, grated
  • 1 tablespoon freshly ground black pepper
  • 1 teaspoon kosher salt
  • 2 tablespoons olive oil

Instructions

  1. Grate the zucchini and place it in a colander. Mix in some salt and set aside for 10 minutes.

  2. After 10 minutes, transfer the grated zucchini to a piece of parchment paper or a clean kitchen towel. Squeeze out as much excess water as possible.

  3. In a large bowl, combine the squeezed zucchini with grated white cheddar cheese, Parmesan cheese, cream cheese, grated garlic, black pepper, and kosher salt. Mix until well combined.

  4. Heat olive oil in a large skillet or frying pan over medium heat. Once the oil is hot, reduce the heat to medium-low.

  5. Using a ladle or large spoon, scoop portions of the zucchini mixture into the hot oil, pressing down gently to form fritters.

  6. Cook the fritters for about 3-4 minutes on each side, or until golden brown and crispy. Flip carefully to ensure even cooking.

  7. Remove the fritters from the skillet and place them on a plate lined with paper towels to absorb any excess oil.

  8. Serve the flourless zucchini fritters warm, topped with additional cream cheese if desired, and accompanied by your favorite sauce.
