KETO Zucchini Meatballs (No Breadcrumbs)


Ingredients:

For Zucchini Meatballs

  • 1 lb ground turkey or ground chicken
  • 1 cup shredded zucchini
  • 1 cup grated Parmesan cheese
  • 1 teaspoon crushed red pepper flakes
  • 1 cup shredded mozzarella cheese
  • 3-4 tablespoons olive oil (for cooking meatballs)

For Creamy Sauce (Optional)

  • 1 stick salted butter
  • 3 cloves garlic, minced
  • 1/2 teaspoon red chili flakes
  • 1 teaspoon capers
  • 1/2 teaspoon lime zest
  • 8 oz cream cheese (1 block)
  • 1/2 cup whole milk or 1% or 2%
  • 1 cup grated Parmesan cheese
  • Salt and pepper, to taste

For Garnish (Optional)

  • Capers
  • Lime zest
  • Lime wedges
  • Red chili flakes

Instructions

  1. Place shredded zucchini on a double-layered paper towel. Spread it out and place another paper towel on top. Fold the paper towel over the zucchini and press down to squeeze out as much water as possible.

  2. In a small bowl, combine ground turkey or chicken, shredded zucchini, grated Parmesan cheese, crushed red pepper flakes, and shredded mozzarella cheese. Use your hands to mix everything thoroughly. Form small meatballs, about 1 1/2 oz each, using an ice cream scoop or by rolling them in your palms. Place them on a plate.

  3. In a frying pan, heat olive oil over medium heat. Once the oil is hot, add the zucchini meatballs, making sure not to overcrowd the pan. Leave some space between each meatball. Cook until browned on all sides and cooked through, about 10-12 minutes, turning occasionally. (See notes for baking instructions if preferred.)

  4. In a separate clean pan, melt butter over low heat. Add minced garlic, red pepper flakes, capers, and lime zest. Cook for 20-30 seconds until fragrant.

  5. Add cream cheese to the pan and stir with a spatula until melted and combined.

  6. Pour in milk and add grated Parmesan cheese. Stir well until the sauce is smooth and creamy. Season with salt and pepper to taste. Allow the sauce to come to a slow boil, then remove from heat.

  7. Add the cooked zucchini meatballs to the creamy sauce. Gently stir to coat the meatballs with the sauce.

  8. Garnish with additional capers, lime zest, red chili flakes, and lime wedges if desired. Serve hot and enjoy!
