Ingredients
For the Scotch Eggs:
- 6 large eggs
- 1 pound ground pork or pork sausage
- 2 teaspoons Worcestershire sauce
- 1 cup breadcrumbs or panko
- 2 tablespoons cooking oil
- ¼ cup all-purpose flour
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon paprika
- 1 teaspoon thyme
- ½ teaspoon salt
- ¼ teaspoon black pepper
Instructions
Prepare the Eggs:
- Allow 4 of the eggs to reach room temperature to prevent cracking during cooking.
- Place these 4 eggs in the air fryer basket and cook at 300°F (150°C) for 12 minutes.
- Once done, transfer the eggs to an ice-water bath for 5 minutes to stop the cooking process.
- Carefully peel the eggs. They may be delicate, so handle them gently. The whites should be set while the yolks will remain slightly soft.
Prepare the Pork Mixture:
- In a bowl, mix the ground pork with Worcestershire sauce.
- Divide the pork mixture into 4 equal parts (approximately ½ cup each).
- Shape each portion of pork into a patty by hand, or place it between two layers of plastic wrap and use a rolling pin to flatten the pork into patties.
Assemble the Scotch Eggs:
- Place a cooked egg in the center of each pork patty.
- Carefully wrap each egg with the ground pork, ensuring that no egg is visible. Make sure the pork layer is even to ensure even cooking.
Prepare the Coatings:
- In a shallow dish, mix together flour, garlic powder, onion powder, paprika, thyme, salt, and black pepper.
- In another bowl, scramble the remaining 2 eggs to create an egg wash.
- In a microwave-safe dish, combine 2 tablespoons of cooking oil with the breadcrumbs or panko. Microwave for 1-2 minutes, stirring every 30 seconds, until the breadcrumbs are golden brown.
Coat the Scotch Eggs:
- Dredge each wrapped egg in the seasoned flour mixture.
- Dip the floured egg into the egg wash.
- Coat the egg evenly with the toasted breadcrumbs or panko. Shake off any excess coating between steps.
Cook the Scotch Eggs:
- Lightly spray the air fryer basket with oil to prevent sticking.
- Place each Scotch Egg into the basket, ensuring they are spaced out to allow for even cooking.
- Air fry at 400°F (200°C) for 12-14 minutes, flipping halfway through the cooking time.
- If the breadcrumbs appear dry, spray with additional oil during cooking to achieve a crispy texture.
Serve:
- Once the Scotch Eggs are golden brown and crispy, remove them from the air fryer.
- Let them cool slightly before slicing to serve.
