Beefaroni

 

Ingredients

  • Seasoning Mix:
    • ½ teaspoon ground cumin
    • ½ teaspoon paprika
    • ½ teaspoon granulated onion
    • ½ teaspoon granulated garlic
    • ¼ teaspoon white pepper
  • Olive or avocado oil
  • 1 medium onion, finely diced
  • 1 pound lean ground beef (85/15)
  • Salt and black pepper, to taste
  • 4 cloves garlic, pressed
  • 3 tablespoons tomato paste
  • 2 (15-ounce) cans tomato sauce
  • 1 (14.5-ounce) can diced tomatoes, drained
  • 10 ounces elbow macaroni (uncooked)
  • 1 teaspoon chopped parsley, plus extra leaves for garnish
  • ½ cup grated jack cheese
  • ½ cup grated sharp cheddar cheese

Preparation

  1. Prepare Seasoning Mix: In a small ramekin, combine the cumin, paprika, granulated onion, granulated garlic, and white pepper. Set aside.

  2. Cook Onions: Heat about 2 tablespoons of olive or avocado oil in a large cast-iron skillet or oven-safe pan over medium-high heat. Add the diced onions and sauté for about 5 minutes, until golden-brown and sweet-smelling.

  3. Brown Beef: Crumble the ground beef into the skillet with the onions. Season with salt, black pepper, and the prepared seasoning mix. Cook until the beef is browned and cooked through, about 5 minutes.

  4. Add Garlic and Tomato Paste: Stir in the pressed garlic until aromatic. Add the tomato paste and stir to incorporate.

  5. Add Sauces: Pour in the tomato sauce and diced tomatoes. Season with additional salt if needed. Let the sauce simmer uncovered on low heat for about 15-20 minutes.

  6. Cook Macaroni: While the sauce simmers, cook the elbow macaroni according to the package instructions. Drain and keep warm.

  7. Combine Ingredients: Stir the chopped parsley into the sauce, then gently mix in the cooked elbow macaroni until well combined.

  8. Broil: Preheat your broiler on high. Top the Beefaroni with the grated jack and sharp cheddar cheeses. Place the skillet under the broiler for about 5 minutes, until the cheese is melted and bubbly.

  9. Serve: Garnish with extra parsley if desired. Serve hot and enjoy!
