Pumpkin Pistachio Energy Balls

 

Ingredients

  • ½ cup raw pistachios
  • ¼ cup raw cashews
  • 10 pitted Medjool dates
  • ¼ cup canned or homemade pumpkin purée
  • Pinch sea salt
  • ½ teaspoon pumpkin pie spice
  • ½ teaspoon cinnamon
  • ½ teaspoon vanilla extract

Instructions

  1. Prep Pistachios: Place ¼ cup of the pistachios in a food processor and process until they resemble coarse sand. Transfer to a small bowl and set aside.

  2. Process Nuts: Add the remaining ¼ cup pistachios and the cashews to the food processor. Process until finely ground.

  3. Combine Ingredients: Add the dates, pumpkin purée, sea salt, pumpkin pie spice, cinnamon, and vanilla extract to the food processor. Process until smooth and well combined. Adjust spices if needed.

  4. Form Balls: Scoop and roll the mixture into 9 golf-ball-sized balls.

  5. Coat and Store: Roll each ball in the reserved pistachios. Serve immediately or store in the fridge or freezer.
