Chimichurri Sauce

 Ingredients:

  • 1 small shallot, cut into wedges
  • 3/4 cup fresh flat-leaf parsley leaves
  • 2 garlic cloves
  • 1 tablespoon fresh oregano leaves
  • 1 1/2 teaspoons kosher salt
  • 1 teaspoon freshly cracked black pepper
  • 3/4 cup extra-virgin olive oil
  • 1/4 cup red wine vinegar
  • 1/2 teaspoon red pepper flakes

Method:

  1. Prepare the Herb Mixture:

    • In a food processor, combine the shallot, parsley, garlic, oregano, salt, and pepper.
    • Pulse until the mixture is well combined but still slightly chunky.
  2. Combine with Oil and Vinegar:

    • Transfer the herb mixture to a small bowl.
    • Add the extra-virgin olive oil, red wine vinegar, and red pepper flakes.
    • Stir well to combine all ingredients thoroughly.
  3. Storage:

    • Store the herb vinaigrette in airtight container in the refrigerator.
    • It can be kept refrigerated for up to 2 weeks.

This flavorful herb vinaigrette is perfect for dressing salads, drizzling over grilled vegetables, or using as a marinade for meats. Enjoy!
