Mediterranean Chicken with Lemons and Olives

This recipe combines tender chicken thighs with the bright flavors of garlic, lemon, and savory olives for a delicious and satisfying dish. Perfect for a weeknight dinner or a special occasion, it's easy to prepare and bursting with Mediterranean-inspired tastes.

Ingredients:

  • 1 tablespoon garlic paste or minced garlic
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon Italian seasoning
  • Salt and freshly ground black pepper, to taste
  • 6 skinless, boneless chicken thighs
  • 2 tablespoons olive oil
  • 1 small yellow onion, finely diced
  • 2 cloves garlic, minced
  • 1 small lemon, thinly sliced
  • 1/4 cup wine (use your favorite variety)
  • 1 cup chicken broth
  • 1 cup marinated olives

Instructions:

  1. Prepare the Chicken: In a large bowl, combine the garlic paste (or minced garlic), dried oregano, Italian seasoning, salt, and black pepper. Mix well until all ingredients are evenly incorporated. Add the chicken thighs to the bowl, rubbing the garlic and herb mixture evenly onto each piece. Set aside while preparing the remaining ingredients.

  2. Cook the Chicken: Heat olive oil in a large skillet or pan over medium heat. Once hot, add the chicken thighs, cooking them for about 5-6 minutes on each side until they are golden brown and cooked through. Remove the chicken from the skillet and set aside on a plate.

  3. Prepare the Sauce: In the same skillet, add the diced onion and minced garlic. Season with a pinch of salt and sauté for about 3 minutes until the onions become soft and translucent. Stir occasionally to prevent burning.

  4. Add Lemon and Wine: Reduce the heat to medium-low. Add the thinly sliced lemon and pour in the wine, stirring gently to deglaze the pan and release any browned bits stuck to the bottom. Let it simmer for about 3 minutes until the wine slightly reduces.

  5. Simmer with Broth and Olives: Pour in the chicken broth, then return the cooked chicken thighs back to the skillet along with any juices that have accumulated on the plate. Bring the mixture to a boil, then reduce the heat to low and let it simmer uncovered for about 5 minutes.

  6. Add the Olives: Gently stir in the marinated olives, ensuring they are well distributed throughout the skillet. Continue to simmer the chicken and olive mixture for an additional 10 minutes, allowing the flavors to meld together and the sauce to slightly thicken.

  7. Serve: Remove the skillet from heat and let it stand for 5-7 minutes to allow the sauce to absorb and intensify in flavor. Serve the Garlic Lemon Chicken thighs warm, spooning the olives and sauce over each portion. Garnish with additional fresh herbs or lemon slices if desired.

This Garlic Lemon Chicken with Olives is best enjoyed with crusty bread, couscous, or a simple green salad on the side. It's a delightful dish that brings Mediterranean flair to your dining table with its vibrant flavors and hearty appeal.
